INGREDIENTS

  • 5 or 6 medium tomatoes
  • 1 cup mozarella cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 1 cup mayonnaise
  • 1/2 cup green onions sliced on bias
  • 6 large basil leaves
  • 1 9-inch deep dish pie crust
  • Oregano, for garnish

DIRECTIONS

  • Brown the pie crust per package instructions.
  • Place tomatoes into boiling water until skins begin to split. Remove tomatoes from water and place under running cold water to stop the tomatoes from cooking and to cool them. Once tomatoes are cool, remove core, remove skin, and chope the tomatoes to about the size slightly smaller than a golf ball. Place tomatoes into a colander to drain.
  • Preheat oven to 350°F. Place the two cheeses and the mayonnaise into a large bowl and mix well to combine.
  • Place the tomatoes into the pie crust, layer onions in a single layer on top of the tomatoes, cover the pie with a single layer of basil leaves. Cover the pie with the cheese mayonnaise mixture. Bake for 25 minutes or until browned. Lightly sprinkle pie with dried oregano. Enjoy!
