INGREDIENTS

  • 1 9-inch baked pie shell
  • 1/4 cup sifted enriched flour
  • 1/2 cup sugar
  • 1 cup water
  • Additional 1/2 cup sugar
  • 3 beaten egg yolks
  • 1/8 teaspoon salt
  • 1 tablespoon butter or margarine
  • 1/4 teaspoon lemon extract
  • 3 tablespoons vinegar

DIRECTIONS

  • Line a 9-inch pie pan with rich pie pastry and bake as usual.
  • Mix together the flour and 1/2 cup sugar in top of double boiler. Add water gradually and cook over hot water 15 minutes or until thickened, stirring constantly.
  • In a bowl combine additional 1/2 cup sugar with beaten egg yolks and salt. Beat until sugar is dissolved. Pour first (hot) mixture into this gradually, beating vigorously until blended well.
  • Return to double boiler; cook over hot water 3 minutes longer or until thick and smooth. Add butter, lemon extract, vinegar. Blend well and cool. Pour into baked shell; top with meringue; bake in slow oven (325°F.) 15 minutes, or until delicately brown. Serve hot.
