INGREDIENTS

  • 1/2 cup mirin (sweet rice wine)
  • 1/2 cup sake
  • 1/2 cup soy sauce
  • 1 tablespoon sugar
  • 2 large sweet red peppers, cut into 2-inch pieces
  • 2 pounds of chicken thighs, boneless, skinless, and cut into 1 1/2-inch pieces
  • 1 bunch of green onions

DIRECTIONS

  • Preheat the grill over medium heat.
  • In a small saucepan, combine the mirin, sake, soy sauce, and sugar. Bring the mixture to a boil over medium-high heat. Remove the saucepan from the heat. Set 1/2 cup of the sauce aside, reserving.
  • Thread the skewers by placing one piece of chicken followed by a piece of pepper followed by a piece of chicken followed by a piece of pepper until the skewer is about 1/2 full. Repeat until 5 or 6 skewers are completed.
  • Grill the skewers, covered, turning occasionally until the meat is cooked through at 165°F internally, about 10-12 minutes. In the last 3 minutes of cooking, begin basting the chicken and pepper skewers frequently with the soy sauce mixture. Grill the green onions for the last 4 - 5 minutes, turning frequently. Serve the chicken and vegetables with the reserved sauce.
