INGREDIENTS

  • 8 oz whole milk heated to 100 degrees
  • 1/3 cup sugar
  • 1 tbsp + 1 tsp active dry yeast
  • 2 egg yolks
  • 15 ounces all-purpose flour, by weight
  • 2 1/2 tsp kosher salt
  • 2 ounces butter at room temperature
  • 2 tbsp butter, melted

DIRECTIONS

  • Place first 6 ingredients into the bowl of a stand mixer. With paddle attachment and on low speed, mix flour mixture for about 1 minute or until all the ingredients come together. Remove the dough from the paddle and place into the bottom of the mixer bowl. Cover the bowl with a towel and rest the dough for 15 minutes. After 15 minutes, attach the dough hook to the mixer. Cut the butter into 4 equal sized pieces. Turn the mixer to low and add the softened butter.
  • When the butter has integrated into the dough, turn the mixer speed to medium and knead the dough for 8 minutes. Remove the dough from the bowl and place onto a lightly flour dusted work top. Using fingertips, flatten the dough and then form into a ball turning the edges under to form a new skin. Place the dough into a container and cover with plastic wrap. Place into a warm place, something like the stove oven, and allow the dough to double in size, about 1 hour.
  • After dough has doubled in size, remove from container and place onto a lightly floured work station. Push the dough down and press into a rectangle with long side facing you. Starting at the edge nearest, roll the dough into a log. Gently press along the crease of the dough to seal most of the seam. Using the palms of your hands, gently roll the long making it a little longer, about 12 to 16 inches long. Cut the log in half crosswise and then cut each portion in half crosswise.
  • Continue cutting, except for bowties and fantans, until needed portions are cut for type of rolls being made. Heat oven to 400°F. For Parker House and Cloverleaf Rolls place each portion onto the work surface and flatten into a 1/2 inch thick circle. Pull the edges of the circle up and into the center for a very rough centered ball. Forming the OK sign with your index finger and thumb, pass the ball through the OK sign stretching and smoothing the ball at the same time. Follow directions at Forming Rolls to form the appropriate roll. Place rolls into a 400°F oven on the middle rack. Bake for 12 to 15 minutes but start checking around 10 minutes. When rolls are a golden brown check the internal temperature for 200°F. Rest rolls for 10 minutes.
