  • 4 (3oz) skinned, boned chicken breast halves
  • Vegetable cooking spray
  • 1/2 cup chopped celery
  • 1/3 cup sliced onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/8 teaspoon pepper
  • 1 medium-size green pepper, cut into strips
  • 1 (16-ounce) can crushed tomatoes


  • Place chicken breasts on rack of a broiler pan coated with cooking spray.
  • Broil 5 inches from heat 10 minutes or until lightly browned, turning once.
  • Combine celery and remaining ingredients in a large nonstick skillet. Bring mixture to a boil; cover and cook over medium heat 10 minutes.
  • Add chicken; cover and reduce heat. Simmer 30 minutes or until chicken is tender.
