Creole Chicken

Creole Chicken Recipe is a simple and easy creole chicken dish using chicken breast, celery, sliced onion, thyme, green pepper and crushed tomatoes.
INGREDIENTS
4 (3oz) skinned, boned chicken breast halves
Vegetable cooking spray
1/2 cup chopped celery
1/3 cup sliced onion
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/8 teaspoon pepper
1 medium-size green pepper, cut into strips
1 (16-ounce) can crushed tomatoes
DIRECTIONS
Place chicken breasts on rack of a broiler pan coated with cooking spray. Broil 5 inches from heat 10 minutes or until lightly browned, turning once.
Combine celery and remaining ingredients in a large nonstick skillet. Bring mixture to a boil; cover and cook over medium heat 10 minutes.
Add chicken; cover and reduce heat. Simmer 30 minutes or until chicken is tender.
