Homemade Hash Brown Potatoes Recipe boils potatoes until tender then gently breaks potatoes into small chunks before grilling on an oiled griddle or heavy bottom skillet to create slightly crisp very tasty hash browns.

INGREDIENTS

  • Russet potatoes (recommended)
  • onion powder
  • cooking oil

DIRECTIONS

  • Determine amount of hash browns needed for the meal. Peel required amount of potatoes. Slowly and carefully place whole potatoes into pot of boiling water.
  • Boil potatoes until a fork inserted into potatoes meets very little resistance. Immediately, but slowly and carefully, pour potatoes into colander to drain. Place under running cold water to stop cooking process.
  • While potatoes are cooling, heat griddle or heavy bottomed skillet to 350°F or over medium-high heat as applicable.
  • When potatoes have cooled to the point they may be comfortably handled, using fingers, gently break all potatoes into small bite-sized chunks. Pour enough oil onto griddle (not too much) so that when potatoes are placed on griddle the oil can be seen to gently shimmer. Spread potatoes out, but touching, on griddle on top of oil. Use an egg turner to spread and press potatoes level all around. Sprinkle all potatoes with a moderate coating of onion powder. Cook potatoes for about 6 - 7 minutes then slowly lift edge of potatoes. If browned, start flipping all potatoes over on griddle. Brown the bottom of potatoes, serve and enjoy.
