HOW TO BUY GROUND BEEF

Ground beef (hamburger) varies in quality of beef and the proportion of fat and lean meat. The ready-ground beef sold by a reliable meat dealer is good fresh beef and is supposed to be sold in two styles: (I) regular ground beef with not more than 25 per cent fat and (2) lean ground beef with not more than 12 per cent fat. Both types should be ground twice.

When beef is ground to order as round steak, shoulder (chuck), flank, etc., check the leanness of the meat and if it is very lean have 2 ounces suet ground with each pound of meat. This is partitularly necessary with ground round steak.

Have the meat ground twice for most uses. Twice-ground meat is more compact. For extra juicy, tender patties have the meat ground only once. Freshly ground beef is bright red in color.
