Reuben Casserole Recipe is a delicious corned beef casserole which layers sauerkraut, caraway seed and corned beef then drizzles with Thousand Island dressing before topping with tomatoes and cheese to make this tasty corned beef recipe.

INGREDIENTS
|
2 cups sauerkraut, drained
and rinsed
|
1/2 teaspoon caraway seed
|
1/2 pound corned beef, sliced thin
|
1/4 cup Thousand Island dressing
|
2 large tomatoes, sliced
|
2 cups Swiss cheese, shredded
|
6 slices rye bread, crumbed
|
2 tablespoons butter or
margarine, melted
|
|

DIRECTIONS
|
1:
Spread sauerkraut in bottom of an
oiled 2-quart casserole. Sprinkle half of
caraway seed over sauerkraut.

2:
Layer
corned beef slices over sauerkraut and
caraway, and drizzle dressing over all.
|
|
3:
Layer tomato slices and cheese over
dressing. Toss bread crumbs and remaining
caraway seeds in butter and
spread over cheese.

Bake at 400°F for
25-30 minutes.
