Lamb Ole Recipe browns lamb shanks in mixture of chili seasoning, flour and salt then adds tomatoes and cooks before adding chili style beans, cornmeal and hominy (if used) to finish cooking before serving this delicious lamb dish.

INGREDIENTS
|
1 package chili seasoning
mix
|
2 tablespoons flour
|
2 teaspoons salt
|
4 lamb shanks
|
3 tablespoons cooking oil
|
1 can (28 ounces) tomatoes (undrained)
|
1 can (15 ounces) chili style beans
|
1 can (15 ounces) golden
hominy (optional)
|
2 tablespoons cornmeal
|
|
|
|
|
|
|
|
|
|
|
|
DIRECTIONS
|
1:
Combine 2 tablespoons chili seasoning mix, flour, and salt. Place in a large plastic bag; add shanks to bag and shake to coat with flour mixture. Heat oil in a large skillet; add shanks and brown on all sides.

Place lamb in casserole dish; mix tomatoes with remaining chili seasoning; pour over shanks.

Bake at 325°F 1 hour. Remove casserole from oven; skim off fat. Add beans, hominy (if desired) and cornmeal to casserole, stirring gently to combine.

4:
Return to oven and continue to bake 1 1/2 hours, or until sauce is slightly thickened and lamb is tender.
