Cheese Puff Ring Recipe uses cream puff pastry made with milk, butter, nutmeg, cayenne, flour, eggs and Gruyere or Swiss cheese to serve as an appetizer or as a salad accompaniment.


INGREDIENTS
1 cup milk
1/4 cup butter or margarine
1/2 teaspoon salt
Pinch each ground nutmeg and cayenne pepper
1 cup flour
4 eggs
1 cup shredded Gruyere or Swiss cheese


DIRECTIONS
1: Preheat oven to 375° F. In a 2-quart saucepan combine milk and butter. Place over medium heat and cook, stirring occasionally, until butter melts. Add salt, nutmeg, and cayenne.
 
2: Add flour all at once, stirring until mixture leaves sides of pan and forms a ball (about 2 minutes). Remove pan from heat.
 
3: Beat in eggs, one at a time, beating after each addition until mixture is smooth and glossy. Stir in 3/4 cup of the cheese.
 
4: Spoon out dough to make eight equal mounds, slightly apart, in the shape of a ring on a greased baking sheet. Sprinkle with remaining 1/4 cup cheese. Bake until puffs are well browned and crisp (40 to 45 minutes). Serve hot.
