Cheese Puff Ring Recipe uses cream puff pastry made with milk, butter, nutmeg, cayenne, flour, eggs and Gruyere or Swiss cheese to serve as an appetizer or as a salad accompaniment.

INGREDIENTS
|
1 cup milk
|
1/4 cup butter or margarine
|
1/2 teaspoon salt
|
Pinch each ground nutmeg
and cayenne pepper
|
1 cup flour
|
4 eggs
|
1 cup shredded Gruyere or
Swiss cheese
|

|
|
|
|
|

DIRECTIONS
|
1:
Preheat oven to 375° F. In a 2-quart saucepan combine milk and
butter. Place over medium heat
and cook, stirring occasionally, until
butter melts. Add salt, nutmeg, and
cayenne.

Add flour all at once, stirring until
mixture leaves sides of pan and
forms a ball (about 2 minutes). Remove
pan from heat.

Beat in eggs, one at a time,
beating after each addition until mixture
is smooth and glossy. Stir in 3/4
cup of the cheese.

Spoon out dough to make eight
equal mounds, slightly apart, in the
shape of a ring on a greased
baking sheet. Sprinkle with remaining
1/4 cup cheese. Bake until puffs are well browned
and crisp (40 to 45 minutes).
Serve hot.
