Beignets Recipe are sweet, rich rectangular breads made with yeast, butter, sugar, salt, evaporated milk and flour which are fried in oil and topped with Confectioners' sugar.

INGREDIENTS
|
1 package active dry yeast
|
1/2 cup warm (105° to 115° F)
water
|
1 egg
|
2 tablespoons butter, melted
|
1/3 cup sugar
|
1 teaspoon salt
|
1 cup evaporated milk
|
3 1/4 to 3 1/2 cups flour
|
Oil for frying
|
Confectioners' sugar
|
|

DIRECTIONS
|

Sprinkle yeast over warm water in
a large mixing bowl, stir, and let
stand a few minutes to dissolve. Add egg, butter, sugar, salt, and evaporated milk and mix well. Add 2 cups of flour and beat
vigorously until blended. Gradually
add enough remaining flour to make
a manageable dough.

Knead on a floured surface for
several minutes, until dough is
smooth, then place in a greased bowl,
cover with plastic wrap, and let rise
overnight in refrigerator.

Roll chilled dough on a floured
surface to a 1/4 inch-thick rectangle
about 12 by 24 inches. With a
long, sharp knife, cut into squares
about 2 or 3 inches to a side. Cover
with a towel and let rest for
about 20 minutes.

In the meantime, heat about
1 1/2 inches of oil to 360° F. Fry 4 or 5 beignets at a time,
turning them frequently, for 2 to 3
minutes, until they are puffy and
brown. Drain on paper towels, then
sprinkle with confectioners' sugar
and serve.
