DIRECTIONS
1:
Preheat oven to 425° F. In a large bowl thoroughly mix flour, baking powder, and salt. Reserving 2 tablespoons of the butter, cut remaining 6 tablespoons butter into flour mixture until coarse crumbs form.
2:
Cook ham in the reserved 2 tablespoons butter in a small frying pan over medium heat, stirring occasionally, until lightly browned.
Let cool slightly, then mix lightly into
flour mixture.
3:
Add cream, all at once, mixing gently just until a soft dough forms. Place dough on a floured board or pastry cloth, turning to coat
lightly with flour. Knead gently until you can form into a uniform ball.
4:
Roll or pat dough until about 1/2 inch thick. Cut with a floured 2 1/2- inch round cutter. Place on ungreased baking sheet. Bake until biscuits are golden brown (15 to 20 minutes). Serve hot.
