Oatmeal Muffins Recipe makes a oats mix of flour, baking powder, salt, shortening and old fashioned oats then when ready to bake adds sugar, milk and egg to create this delicious oatmeal muffin recipe.

INGREDIENTS
|
1 cups plus 2 tablespoons
Basic Oats (below)
|
l/4 cup sugar
|
1 cup milk
|
1 egg, beaten
|
Basic Oats Mix:
|
6 cups sifted all-purpose
flour
|
l/4 cup (4 tablespoons) baking
powder
|
4 teaspoons salt
|
1 1/3 cups shortening
|
2 cups quick or old fashioned
oats, uncooked
|

|

DIRECTIONS
|
1:
For Basic Oats Mix: Sift flour, baking powder, and salt together into large bowl. Cut in shortening until mixture resembles coarse crumbs. Stir in oats.

Store mixture in an airtight container in a cool, dry place until ready to use.
|

For Muffins: Combine Oats Mix and sugar in a bowl. Add milk and egg; stir until just blended.

4:
Fill 12 greased 2 1/2-inch muffin-pan wells 2/3 full. Bake at 400°F about 20 minutes, or until golden brown.
