Blueberry Orange Pecan Bread

Blueberry Orange Pecan Bread Recipe creates a delicious sweet bread using flour, baking powder, salt, baking soda, nutmeg, sugar, pecans, eggs, milk, orange juice, grated orange rind, butter and blueberries.


INGREDIENTS
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon each baking soda and ground nutmeg
1/2 cup sugar
1/2 cup chopped pecans
2 eggs
1/4 cup milk
1/2 cup orange juice
2 teaspoons grated orange rind
1/3 cup butter or margarine (melted and cooled)
1 cup blueberries


DIRECTIONS
1: Preheat oven to 350° F. In a large bowl stir together flour, baking powder, salt, baking soda, nutmeg, and sugar. Mix in pecans.
 
2: In a medium bowl beat eggs with milk, orange juice, and orange rind; blend in butter. Add egg mixture to flour mixture, mixing just until dry ingredients are moistened. Gently fold in blueberries. Spread in a greased, lightly floured, 4 1/2- by 8 1/2-inch loaf pan.
 
3: Bake until loaf is golden brown and a wooden skewer inserted in center comes out clean (55 minutes to 65 minutes).
 
4: Let cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
