DIRECTIONS
1:
Place the masa harina in a bowl. Gradually work the water into the masa harina. Mix together well. Knead for 3 to 5 minutes, pushing hard with the heel of your hand. Keep
the dough wrapped in waxed paper or plastic wrap while you make the tortillas, so that it does not dry out.
2:
Heat a heavy frying pan over medium-high heat. Break off a walnut-sized piece of dough and hand-pat it 2 or 3 times to partially flatten. Place on a tortilla press between two
pieces of plastic wrap or waxed paper. Close the lid and press. Remove the tortilla and peel the plastic away from the tortilla. If you don't have a press, a rolling pin may be used; however, the dough must still be
placed between pieces of plastic wrap
or waxed paper or it will stick to the
rolling pin.

3:
Place the tortilla on the heated, ungreased heavy frying pan. Cook until the edges begin to dry (about 30 seconds). Turn over and bake until lightly speckled on the underside (about 1 minute). Turn a second time and bake for an additional 30 seconds. The total cooking time will be between 2 and 3 minutes, depending upon the thickness of the tortilla and the temperature of the pan. A well-made tortilla will usually puff up on the second flip, so don't be alarmed when this happens.
4:
Wrap the tortillas together in a cloth as they are made, to keep them soft and warm.
