Green Chili Cornbread

Green Chili Cornbread Recipe makes cornbread batter with milk, egg, vegetable oil, cornmeal, flour, sugar and baking powder then adds cheddar cheese, green onion, green chilies and whole kernel corn before baking.

INGREDIENTS

4 ounces sharp Cheddar
cheese (2 cups shredded)

2 green onions, trimmed and
cut in 1-inch pieces
|
1 can (4 ounces) whole
green chilies, drained and
seeded
|
1 cup milk
|
1 egg
|
1/4 cup vegetable oil
|
1 1/4 cups cornmeal
|
3/4 cup flour
|
1/4 cup sugar
|
1 tablespoon baking powder
|
1/2 teaspoon salt
|
1 can (8 ounces) whole kernel corn
|

DIRECTIONS

Using shredding disc of food processor, shred cheese and set aside. Using steel blade, process the green onions until finely
chopped.

Add green chilies to green onions in bowl and process, in quick on/off motions, until finely chopped and set aside. With plastic blade in bowl, add milk, egg, and oil, and
process until blended. Add cornmeal, flour, sugar, baking powder, and salt and mix together for a few seconds. Add corn, green onions, and chilies.

Pour half of batter into a greased 9-inch square baking pan. Sprinkle with half of cheese. Repeat, using remaining batter and cheese.

Bake at 400°F about 35 to 40 minutes, or until lightly browned. Serve warm cut in squares.
