Island Bread Recipe makes a very tasty bread using yeast, brown sugar, honey, whole wheat flour, olive oil, grated orange and lemon peel, salt, all-purpose flour and anise seed enhances the unique tastes of this bread.

INGREDIENTS
|
2 packages active dry yeast
1 1/2 cups warm water (105 °
to 115° F)
|
1/4 cup packed dark brown
sugar
|
2 tablespoons honey
|
3 cups whole wheat flour
|
1/4 cup olive oil
|
2 tablespoons grated orange
peel
|
1 tablespoon grated lemon
peel
|
2 1/2 teaspoons salt
|
1 teaspoon anise seed,
crushed
|
2 cups all-purpose flour
|

DIRECTIONS
|

Dissolve yeast in warm water; stir in brown sugar, honey, and whole wheat flour. Beat with a wooden spoon until smooth. Cover and let rise in a warm place until almost double
in bulk (about 2 hours).

Stir in oil, orange and lemon peels, salt, and anise seed. Gradually add 1 3/4 cups all-purpose flour, beating vigorously. Cover for 10 minutes.

Sprinkle remaining 1/4 cup flour on a board and work it in. Put dough on board, cover, and let rise until double in bulk. Shape into a round loaf; put onto a well-greased cookie sheet. Let rise until dough is double in bulk.

Bake at 375°F 45 minutes. Turn out of pan immediately and cool on a rack.
