DIRECTIONS
1:
Sprinkle yeast over the water in large bowl of electric mixer. Add 1 tablespoon of sugar. Let stand until yeast is soft, about 5 minutes. Add the remaining sugar, milk, salt and butter. Add 2 cups of the flour, mix to blend, then beat at medium speed until smooth and elastic, about 5 minutes. Beat in egg, then stir in about 1 1/2 cups more flour to make soft dough. Turn dough out onto a board coated with some of the remaining flour.

2:
Knead until dough is smooth and satiny and small bubbles form just under surface, 8 to 10 minutes, add just enough flour to prevent dough from being sticky. Turn dough in a greased bowl, cover with plastic wrap and a towel. Let rise in a warm place until doubled in bulk, about 1 hour.
3:
Punch dough down. Knead into a smooth ball, let rest for 10 minutes. Form dough into a rectangle from left to right and divide into two equal portions. Divide each of those two portions into 6 equal portions. Form each portion into a ball. Roll the ball with the palms of the hands to form a strand 6-inches long. Place buns well apart on a greased baking sheet(s). Let rise until almost doubled in bulk, about 30 minutes. Preheat oven to 400°F.
4:
Brush buns lightly with melted butter. Bake until golden brown, 15 to 20 minutes). Transfer to wire racks to cool. Split when cool. Makes 12 buns.
