French Country Style Omelettes Recipe uses olive oil, zucchini, mushrooms, tomato, thyme, eggs, milk, cheese, and chives in building this delicious French omelettes recipe.

INGREDIENTS
|

2 tsp olive oil
|
|
1 small zucchini, thinly sliced
|
|
1 cup mushrooms, thinly sliced, white variety
|
|
1 medium tomato, seeded and chopped
|
|
1/2 tsp dried thyme
|
|
1/4 tsp table salt
|
|
1 pinch black pepper
|
|
4 large eggs
|
|
1 tbsp milk
|
|
1/4 cup goat cheese, soft, crumbled
|
|
2 tbsp chives, snipped
|
|
|
|
|
|
|
|
|
|
|
|
|
|

DIRECTIONS
|

1:
Heat 1 teaspoon oil in medium nonstick skillet over medium heat. Add zucchini, mushrooms, tomato, thyme, salt, and pepper; cook, stirring, until vegetables are softened, about 3 minutes. Transfer to plate.

Beat together eggs and milk in medium bowl.

Wipe skillet clean. Add remaining 1 teaspoon oil to skillet. Pour in half of egg mixture and cook until almost set, about 3 minutes, gently lifting edge of eggs with spatula to allow uncooked portion of eggs to flow underneath.

Spoon half of vegetable mixture over half of omelette. Top with 2 tablespoons goat cheese and 1 tablespoon chives. Fold unfilled portion of omelette over filling. Slide omelette onto plate and keep warm. Repeat with remaining egg mixture, vegetable mixture, cheese, and chives to make another omelette. Serving size: 1 omelette.
