Maple French Toast Casseroles combines cubed bread, potato starch, sorghum and garbanzo bean flour, baking powder, cinnamon and xanthan gum then combines with coconut milk beverage, olive oil, maple syrup and vanilla extract to bake.

INGREDIENTS
|
5 cups (about 1/2 lb) sandwich bread, cut into 1/2-inch cubes
|
1/2 cup potato starch
|
1/2 cup sorghum flour
|
2 tbsp chickpea/garbanzo bean flour
|
2 tsp baking powder
|
2 tsp ground cinnamon
|
1/4 tsp xanthan gum
|
1/4 tsp salt
|
1 1/2 cups unsweetened rice or coconut milk beverage
|
6 tbsp extra-light olive oil or canola oil
|
1/3 cup maple syrup
|
1/2 tsp vanilla extract
|

DIRECTIONS

Preheat oven to 350° F and lightly grease six 4-ounce ramekins. Place bread cubes, starch, flours, baking powder, cinnamon, xanthan gum and salt in a large bowl and toss to evenly distribute ingredients.

In a medium bowl, whisk together milk beverage, oil, maple syrup and vanilla. Pour over bread mixture and gently stir to combine. Let bread soak 10 minutes.

Divide the bread mixture among the ramekins and spread to even out.

Bake 25-30 minutes, or until golden brown. Cool 15 minutes before serving. Leftovers can covered and refrigerated for up to 7 days.
