Arkansas Chicken and Rice Recipe creates a baked chicken casserole using boiled fryers combined with rice, butter, olive oil, onion, garlic and tomatoes which results in a very tasty chicken casserole.

INGREDIENTS
|
2 large fryers, disjointed
|
1/4 c. olive oil
|
1/4 c. butter
|
2 c. rice
|
1 sm. onion, minced
|
1 clove of garlic, minced
|
1 No.2 can tomatoes
|

|
DIRECTIONS
|
1:
Cook the chickens in boiling water until tender. Drain and reserve stock. Heat
the oil and butter in a skillet. Brown the chicken in oil mixture and drain on
paper towels. Brown the rice, onion and garlic in same skillet and add tomatoes.
Place rice mixture in a deep casserole and cover with chicken. Skim the fat from
the chicken stock and pour enough stock into the casserole to cover rice mixture.
Cover the casserole.

Bake in a 350-degree oven for about 1 hour, adding
stock, if needed. Garnish with parsley and pimento strips.
