Batter Fried Chicken Recipe uses flour, salted water, soy sauce, eggs, milk, pepper and oil combined with a very unique technique to prepare the chicken for frying.

INGREDIENTS
|
1 5-pound stewing chicken, disjointed
|
Salted water
|
1 cup sifted flour
|
2 tablespoons soy sauce
|
2 beaten eggs
|
2/3 cup milk
|
3/4 teaspoon salt
|
1/2 teaspoon pepper
|
Fat or oil for frying
|

DIRECTIONS
|
1:
Put cleaned chicken in kettle and cover with salted water. Bring to boil. Cover and simmer until tender, about 1 1/2 hours. Drain and reserve broth for other uses. (Chicken can be cooked a day ahead.)

To make batter, combine remaining
ingredients except oil and beat with
rotary beater until well blended.

Melt fat to depth of 1 1/2 inches in
large, deep, heavy skillet. Heat oil to
370°F. on frying thermometer, or until
a l-inch bread cube browns in 1 minute.

4:
With tongs, dip each piece of chicken
in batter. Fry in oil until golden brown
on all sides. Drain on absorbent paper.
Serves 6.
Note: Bones can be removed from
larger pieces before dipping in batter.
