Ultimate Chicken Casserole parts from the norm by using uncooked rice, chicken broth, cream of chicken soup, cream of mushroom soup and chicken breasts to create a wonderfully tasty chicken casserole.

INGREDIENTS
|
1 1/3 Cups uncooked rice
|
2 Cups chicken broth (1 14.5oz can)
|
1 1/3 Cups water
|
1 10.75oz can cream of chicken soup
|
1 10.75oz can cream of mushroom soup
|
2 chicken breasts or equivalent amount of meat from any chicken pieces
|
|

DIRECTIONS

1:
Add chicken broth and water to a large bowl. Slowly add rice, stirring constantly, to coat individual grains of rice with liquid, to prevent rice from sticking together.

Add cream of chicken soup to the rice and water and stir to dissolve soup in the mixture. Add the cream of mushroom soup to the mixture and stir to dissolve the soup in the mixture. Pour the rice/water/soup mixture into a 9in. X 13in. casserole dish. Heat oven to 350°F.

Cut breasts into chunks approximately 1 in. X 1 in. Add chicken to casserole, spreading chicken throughout the casserole.

Cover the casserole dish with a lid or with aluminum foil. Cook covered for 45 minutes. Remove lid or aluminum foil and cook another 25 minutes. Casserole will appear rather wet when removing from oven. Do not cook longer. The liquid will absorb into the casserole as the dish begins to cool. Let stand about 5 minutes before serving.
