Turkey Hash Recipe from the 1920s uses left over turkey, homemade turkey stock, boiled potatoes, butter, parsley, salt and pepper to create this delicious turkey hash recipe.

INGREDIENTS
|
1 1/2 C chopped left over turkey.
|
2 1/2 C diced boiled potatoes.
|
2 T butter.
|
1 T minced parsley
|
Salt and pepper to taste.
|
1 1/2 C turkey stock.
|

DIRECTIONS
|
1:
Remove turkey meat from bones and put the stripped bones in a small amount of water,
barely enough to cover and simmer 1 hour.

Combine chopped meat with the diced potatoes and brown in the butter which has been melted in a skillet.
|

Add parsley, seasonings, and the stock obtained by simmering the bones.
|
|
4:
Cook slowly for 20 minutes, stirring occasionally, until flavors are blended and
moisture is evaporated to desired point. Serve hot. 5 servings.
