Lemon Bars Cookies Recipe uses flour, butter, sugar, eggs, lemon zest and lemon juice to create this delicious lemon cookie recipe.

INGREDIENTS
|
1 cup flour
|
1 1/4 cups granulated sugar
|
3/4 tsp. salt
|
12 Tbl. butter, melted and unsalted
|
2 tsp. cream of tartar
|
2 Tbl. all-purpose flour
|
3 eggs
|
3 egg yolks
|
2 tsp. lemon zest
|
2/3 cup lemon juice
|
|
|
|

DIRECTIONS
|
1:
Line 8-inch X 8-inch oven proof dish with aluminum foil so that foil covers entire bottom and sides of dish and extends a couple of inches outside the dish. The foil will be used to lift the entire cookie out of the dish as a whole. Preheat oven to 350°F.

In a bowl, combine the flour, 1/4 cup sugar, 1/2 tsp. salt and whisk to combine well. Add 8 Tbl. melted butter and whisk to combine well and creating a thick dough. Using the back of a large spoon, press the dough to cover the entire bottom of the 8-inch dish to a uniform depth. Place dish into oven on middle rack and cook for 19 to 24 minutes or until golden brown. Remove from oven and set aside.

In medium bowl, combine cream of tartar, 1 cup granulated sugar, 2 Tbl. flour, 1/4 tsp. salt, 3 eggs and 3 egg yolks. Whisk to combine well. Add lemon zest and lemon juice, whisk to combine.

Pour egg/lemon mixture into medium sauce pan. Place pan over medium-low heat. Stir constantly to prevent eggs from curdling. Cook until
mixture reaches 160°F (5 - 8 minutes). Remove from heat. Add 4 Tbl. butter and stir to dissolve butter. Strain egg mixture to remove any
curdle and the lemon zest. Pour into 8-inch dish and place on middle rack of oven. Cook for 8 to 12 minutes or until egg mixture is set.
Cool on wire rack for 1 1/2 hours. Lift cookie out of dish using foil. Cut into 12 bars. Enjoy!
