1 28oz can peaches, drained
|
2 1/2 cup sugar
|
1 1/2 cups self-rising flour
|
2 teaspoons vanilla
|
Milk, for thinning batter
|
1 1/4 cup water
|
Heaping tablespoon cornstarch
|
For Cinnamon/Sugar:
|
1/2 cup sugar
|
1/2 teaspoon cinnamon, ground
|

DIRECTIONS
|
1:
Preheat oven to 400°F. Melt butter in a 13x9 inch metal baking pan. In a heavy sauce pan, combine peaches, sugar, and water and bring to a boil.

In a small bowl, combine 3/4 cup water, cornstarch to dissolve cornstarch. Add to peach mixture; return to boil.

In a mixing bowl combine 1 1/2 cups sugar, flour, and vanilla. Mix well, using milk to make a thin batter; a little thinner than a pancake batter.

Pour hot peaches into pan with melted butter, and pour batter over peach mixture. Top with cinnamon/sugar mixture. Bake 30 minutes or until golden brown.
