Cornbread Tamale Pie Recipe uses ground beef, onion, celery, tomatoes, corn, tomato sauce, chili powder, salt, pepper, flour, baking powder, cornmeal, egg, milk and vegetable oil in creating this tasty Tex-Mex tamale pie recipe.

INGREDIENTS

1 lb. ground beef
|
1/2 cup chopped onion
|
1/3 cup chopped celery
|
1 can (16 ounces) tomatoes (undrained)
|
1 can (12 ounces) whole kernel corn, drained
|
1 can (8 ounces) tomato sauce
|
1 Tbl. chili powder
|
1 tsp. salt
|
1/4 tsp. black pepper
|
1/4 cup all-purpose flour
|
1 1/2 tsp. baking powder
|
1/2 tsp. salt
|
3/4 cup cornmeal
|
1 egg, beaten
|
1/2 cup milk
|
2 Tbl. vegetable oil
|

DIRECTIONS

Brown ground beef, onion, and celery in a skillet; drain off excess fat. Add tomatoes, corn, tomato sauce, chili powder, 1 teaspoon salt and the pepper; simmer 10 minutes.

Sift together flour, baking powder, and add 1/2 teaspoon salt into a bowl. Mix in cornmeal. Stir in egg, milk and oil. Mix only until dry ingredients are moistened.

Spoon hot meat mixture into a 2 quart casserole. Top with cornbread topping, spreading topping to cover all.

Bake, uncovered, at 425°F for 25 minutes or until cornbread is golden brown. 6 Servings
