Ham and Corn Fritters is a circa 1919 recipe which combines ground cooked ham, milk, whole kernel corn and onion then adds a dry mix of flour and baking powder before dropping by the teaspoon into hot oil to fry to a delicious golden brown.

INGREDIENTS
|
1 cup ground cooked ham
|
1 cup cooked or canned whole kernel corn
|
1T minced onions
|
2/3C enriched flour
|
1 1/2 t baking powder
|
1/4C milk or corn liquid
|
|

|
DIRECTIONS
|
1:
Mix ground ham, corn and onion.
|

2:
Stir dry ingredients together. Add to corn mixture. Add liquid and mix well.

3:
Drop by teaspoonfuls into deep fat at 365°F. Fry until golden brown. Drain.
