Quick Pepperoni Pasta Recipe combines cooked spaghetti, mushrooms, pepperoni, margarine, fresh spinach, Parmesan cheese, fresh basil and lemon juice to make this very tasty pepperoni pasta recipe.

INGREDIENTS
|
6 ounces dried spaghetti, broken
in half
|
3 cups sliced fresh mushrooms
(8 ounces)
|
2/3 cup cubed pepperoni (3 ounces)
|
1 tablespoon margarine or butter
|
6 cups lightly packed torn fresh
spinach (8 ounces)
|
1/4 cup grated Parmesan cheese
|
2 tablespoons snipped fresh basil
|
1 teaspoon lemon juice
|
|

DIRECTIONS
|
1:
Cook pasta according to
package directions; drain.
Meanwhile, in a very large skillet
cook mushrooms and pepperoni in
hot margarine over medium heat
about 5 minutes or just until
mushrooms are tender. Drain. Stir
in spinach. Cook and stir about
1 minute or until spinach begins to
wilt. Remove from heat.

In a large bowl combine cooked
pasta, spinach mixture, 3 tablespoons
of the Parmesan cheese, the basil,
and lemon juice; toss gently to
combine. Sprinkle with the remaining
1 tablespoon Parmesan cheese.
Makes 4 servings.
