Quick and Easy Puff Pastry Recipe makes classic French puff pastry using all-purpose flour, cake or pastry flour, butter and whipping cream with this puff pastry recipe.

INGREDIENTS
|
1 1/3 cups all-purpose flour
|
2/3 cup cake or pastry flour
|
1 teaspoon salt
|
14 tablespoons unsalted
butter, cut in pieces and
frozen for 30 minutes
|
1/2 to 3/4 cup very cold
whipping cream
|

DIRECTIONS
|
1:
Combine flours and salt in a bowl or on a marble work surface. Cut in butter coarsely until it is reduced to 1/4-inch bits. Add 1/2 cup cream and mix gently, adding additional
cream if necessary, until mixture just forms a ball. Amount of cream will vary depending on humidity and type of flour.

Roll dough out on a lightly floured surface into a rectangle measuring approximately 8 by 20 inches. Fold the two 8-inch ends toward the
center until they meet in the middle. Then fold one half over the other. Wrap in plastic and refrigerate dough 1 hour. Repeat the rolling and folding process twice, refrigerating the dough 1 hour after each time. Repeat rolling and folding one more time. Puff pastry is now ready to use.

Makes about 1 pound puff pastry, enough for 15 bouchees or 4 dozen palmiers.
