INGREDIENTS

3 tablespoons olive oil
|
1 large onion, thinly slivered
|
1/2 teaspoon ground cumin
|
1/2 pound chorizo sausages
|
3 cups (3/4 lb) shredded
Monterey jack cheese
|
Tomato and Green Chile Sauce (search recipes)
|
Whole Wheat Pizza Dough (search recipes)
|

DIRECTIONS
|
1:
Prepare Whole Wheat Pizza Dough
and let it rise. While dough rises, make Tomato and Green Chile Sauce, then set
it aside.

Preheat oven to 450° F. Heat oil in
a large frying pan over moderate
heat. Add onion and cook, stirring
often, until soft but not browned (8 to
10 minutes); mix in cumin, then
transfer onion mixture (including
oil) to a bowl. Remove casings from sausages and crumble into same pan in which
onions cooked. Cook, stirring often,
until lightly browned. Remove sausage
from pan with a slotted spoon
and drain on paper towels.

Grease two 11 to 12-inch pizza
pans (or one 17 to 18-inch pizza
pan). Divide dough into two
equal portions; roll each half out to
an 8-inch circle (or roll all of the
dough to a 12 to 14-inch circle). Use
your hands to pat and stretch dough
to fit pans. Divide sauce over the two pizzas
(or spread it evenly over the large,
single one). Sprinkle evenly
with cheese. Spread onions over
cheese. Spoon sausage over onions.

Bake on lowest rack of oven until
crust browns well (15 to 20 minutes
for small pizzas, 20 to 25 minutes
for large, single pizza). Cut
into wedges or squares and serve
at once.
