Orange Ham Loaf with Raisin Sauce Recipe makes a beautiful and very tasty dish by partially slicing canned pork-ham luncheon meat and stuffing with orange slices before covering with sauce of brown sugar, flour, dry mustard, and raisins.

INGREDIENTS
|
1 12-ounce can pork-ham luncheon meat
|
2 large oranges
|
For raisin sauce:
|
1/2 cup brown sugar
|
1 tablespoon flour
|
1 teaspoon dry mustard
|
1 teaspoon grated lemon rind
|
1 1/2 tablespoons lemon juice
|
1 1/2 tablespoons vinegar
|
1/3 cup seedless raisins
|
|

DIRECTIONS
|
1:
Slice meat crosswise in 1/4-inch slices to within 1 inch of bottom, Place loaf in shallow baking pan.

Peel and section oranges. Place orange sections between meat slices to form fan-shaped loaf.
|

Pour raisin sauce over loaf. Bake in moderate oven (375°F.) 20 minutes. Baste occasionally during baking.

Raisin Sauce: Combine 1/2 cup brown sugar, 1 tablespoon flour, 1 teaspoon dry mustard, 1 teaspoon grated lemon rind, 1 1/2 tablespoons lemon juice, 1 1/2 tablespoons vinegar, and 1/3 cup seedless raisins in saucepan. Heat to boiling point and cook over low heat 1
minute, stirring constantly.
