Pork Sausage Recipe is made with Boston butt and uses black pepper, sage, thyme, rosemary, brown sugar, nutmeg, cayenne pepper and red pepper flakes which may be adjusted per individual tastes to make this very tasty pork sausage recipe.

INGREDIENTS
|
2 1/2 pound Boston butt
|
2 teaspoons salt
|
2 teaspoons black pepper
|
2 teaspoons fresh sage (if dried, use 1/3 as much)
|
2 teaspoons fresh thyme (if dried, use 1/3 as much)
|
1/2 teaspoon fresh rosemary (if dried, use 1/3 as much)
|
1 teaspoon brown sugar (optional)
|
1/2 teaspoon ground nutmeg
|
1/2 teaspoon cayenne pepper
|
1/2 teaspoon red pepper flakes
|

DIRECTIONS

Cut Boston butt into 3/4 inch cubes. Place cubes in a bowl and place in freezer for 30 minutes. Place bowl and cutter of food processor in freezer while pork is cooling. Mix all ingredients, except pork, together in a bowl and mix well to blend.

Assemble food processor and then place a couple of handfuls of pork into processor bowl. Chop on high until pork is consistency of sausage. Remove chopped pork from processor bowl and place in a large bowl. Process all pork in this manner.

Sprinkle about 1/4 of spices over pork and mix well to blend spices and pork. Repeat mixing until all spices are blended with pork.

Pork sausage is ready at this point to either cook all, cook some and place remaining into zip lock bags and freeze, or freeze all.
