INGREDIENTS
|
1 1/2 cups fat-free chicken broth, divided
|
1 tablespoon cornstarch
|
1 tablespoon all-purpose flour
|
1/2 teaspoon salt
|
1 egg
|
1 pound lean boneless pork, trimmed and cubed or cut into strips
|
Vegetable cooking spray
|
1/2 cup chopped carrot
|
1 medium-size green pepper, chopped or cut into strips
|
1 clove garlic, minced
|
1/3 cup red wine vinegar
|
2 tablespoons reduced-sodium soy sauce
|
1 tablespoon cornstarch
|
1/4 cup water
|
Sugar substitute to equal 3/4 cup sugar
|

DIRECTIONS
|

Combine 1/4 cup broth, 1 tablespoon cornstarch, and next 3 ingredients; beat with a wire whisk. Dip pork into mixture.

Coat a skillet with cooking spray; place over medium heat until hot. Add pork; cook 5 minutes. Remove pork; drain.

Wipe skillet with a paper towel; coat skillet with cooking spray. Add carrot, pepper, and garlic; saute until tender. Stir in remaining 1 1/4 cups broth, vinegar, and soy sauce.

Dissolve 1 tablespoon cornstarch in water. Stir into vegetables mixture, and bring to a boil. Reduce heat, and simmer, stirring constantly, 1 to 2 minutes or until vegetable mixture is thickened. Stir in pork and sugar substitute. Cover and simmer until pork is tender. Serve over cooked rice (cooked with salt or fat), if desired.
