Pimento Cheese and Ham Egg Scramble Recipe combines eggs, salt and pepper and hot sauce then sautes deli ham and red pepper before adding to cooking egg mixture along with scallions, cheddar and cream cheese.

INGREDIENTS
|
1 to 2 tsp hot sauce
|
1 Tbsp olive oil or butter
|
3 oz thinly sliced deli ham, torn into small pieces
|
1 medium roasted red pepper, cut into 1/4 in. pieces
|
2 scallions, thinly sliced
|
2 oz extra-sharp Cheddar cheese, coarsely grated; 1/2 cup
|
2 Tbsp cream cheese, cut into small pieces
|
1 Tbsp olive oil or unsalted butter
|
For Scrambled Eggs:
|
8 large eggs
|
Kosher salt and pepper
|

DIRECTIONS
|

Whisk together the egg mixture (eggs, 1 Tbsp water, salt and pepper) plus the hot sauce. Heat the oil or butter in a large nonstick skillet over medium heat. Add the deli ham and cook, tossing occasionally , until beginning to brown around the edges, 2 to 3 minutes. Add the pepper and cook, tossing, for 1 minute; transfer to a plate.

Add the egg mixture to the skillet and cook as directed below.

Fold in the ham and pepper, scallions, cheese, and cream cheese.

For Scrambled Eggs: In a large bowl, whisk together the eggs, 1 Tbsp water and 1/2 tsp each salt and pepper. Heat the oil or melt the butter in a 10-in. nonstick skillet over medium heat. Add the eggs and cook, stirring with a rubber spatula every few seconds, to desired doneness, 2 to 3 minutes for medium-soft eggs.
