Roast Pork with Winter Veggies Recipe coats pork tenderloin with tomato paste, seasons with fennel seeds, salt and pepper before roasting with sweet potatoes to make this delicious roast pork recipe.


INGREDIENTS
1 pork tenderloin, 1 1/4 lbs.
2 T tomato paste
2 T fennel seeds
3 T vegetable oil
2 cloves garlic, pressed
2 bunches Swiss chard, chopped
1 can (14oz) no-salt-added white been, rinsed and drained
1/2 t plus 1/8 t salt
2 t pepper
3 medium sweet potatoes, cut into 1/2 in. chunks


DIRECTIONS
1: Place tenderloin on large rimmed baking sheet; brush with tomato paste. Sprinkle with fennel seeds, 1/2 t salt, and pepper.
 
2: Toss sweet potatoes with 2 T vegetable oil; add to pan. Roast in 450°F. oven 25 minutes or until pork is cooked (145°F.).
 
3: In 5 qt. saucepot, heat 1 T vegetable oil on medium. Add garlic; cook 1 minute, stirring. Add Swiss chard and 1/8 t salt. Cook 7 minutes or until crisp tender, stirring.
 
4: Add white beans. Serve with pork and potatoes.
