Skillet Grilled Pork Loin with Steamed Vegetables

Pork loin is grilled in a skillet over medium heat after lightly seasoning with salt, pepper and ground turmeric. About two minutes per side is all it takes to a moist and delicious pork loin dish.

INGREDIENTS
|
Pork loin cut to 1/4 inch thick pieces
|
salt
|
pepper
|
turmeric
|
microwavable bag of frozen assorted vegetables
|
cooking oil
|

DIRECTIONS

Note: pork loin should not be confused with pork tenderloin. Pork loin is more the color and texture of boneless pork chops. Care should be taken not to over cook pork loin or it will be dry and not very tender. Pork loin is a drier cut of meat than pork tenderloin - but considerably less expensive.

Place skillet over medium heat. Add just enough cooking oil to hot skillet to prevent pork loin from sticking when added to skillet.

Microwave assorted microwavable vegetables according to package instructions. Add sliced pork loin to skillet. Move loin just a little after adding to skillet to prevent sticking. Lightly sprinkle each pork loin piece with salt, pepper and turmeric.

After about two minutes, flip pork loin in skillet, again moving just a little to prevent sticking. Lightly sprinkle with seasonings. After about two minutes, check loin with thermometer and if approaching 165°F, remove to service plate. If a thermometer is not available, cut through the center of the thickest pork loin to check doneness. Serve with steamed vegetables. Enjoy!
