Calico Rice Salad Recipe uses cooked rice, hard-cooked eggs, onion, canned pimiento, green pepper, celery, dill pickle, mayonnaise, French salad dressing and prepared mustard to create this attractive and very tasty rice salad.

INGREDIENTS

3 cups cooked rice
|
6 hard-cooked eggs, coarsely
chopped
|
1/2 cup chopped onion
|
1/4 cup chopped canned pimiento
|
1/4 cup chopped green pepper
|
1/4 cup chopped celery
|
1/4 cup chopped dill pickle
|
1/3 cup mayonnaise or salad
dressing
|
1/4 cup French salad dressing
|
2 tablespoons prepared mustard
|
|

DIRECTIONS
|
1:
Combine rice, eggs, onion, pimiento, green
pepper, celery, dill pickle, 1 teaspoon salt,
and dash pepper.

Blend together mayonnaise,
French salad dressing, and mustard;
add to rice mixture and toss. Chill thoroughly.
|

3:
Lightly pack rice mixture into five 5-ounce custard cups; immediately turn out on
lettuce-lined plates.
