Ensalada de Pimientos Pimiento Salad Recipe is most often prepared with red pimientos using onion, tomato, olives, salt and pepper and oil and vinegar dressing.

INGREDIENTS
|
1 pound red pimientos (or
combination if red and
green bell peppers)
|
1 small onion, sliced into
thin rounds
|
1 tomato, cut in half-slices
|
3 tablespoons olive oil
|
2 tablespoons vinegar
|
Salt and pepper to taste
|

DIRECTIONS
|
1:
Roast the pimientos or bell peppers
over an open flame or in a broiler
until their skin is blackened. As they are done, put them in
a plastic bag to steam. After a few
minutes they should peel easily.

2:
Cut the stems from the peeled
peppers and remove the seeds. Cut
into narrow strips and arrange on a
serving platter. Top with onion
rounds. Surround with the half-slices
of tomato.

Mix together the oil, vinegar, and
salt and pepper; pour mixture over
the peppers.
