Maw Maw's Coleslaw Recipe combines white and green cabbage, assorted greens, green onion and parsley then combines salt, black pepper, cayenne and sugar then combines all to coat with mixture of mayonnaise and whole grain mustard.

INGREDIENTS
|
1/2 pound white cabbage, shredded (about 2 cups)
|
1/2 pound red cabbage, shredded (about 2 cups)
|
1/2 pound assorted greens, such as mustard greens, collards, or spinach, trimmed, washed and shredde
|
1 cup thinly sliced red onions
|
1 cup chopped green onions, green part only
|
1/2 cup chopped parsley leaves
|
1 1/4 cups mayonnaise
|
1/4 cup Creole or whole grain mustard
|
1 teaspoon salt
|
1/4 teaspoon freshly ground black pepper
|
1/4 teaspoon cayenne
|
2 teaspoons sugar
|

DIRECTIONS

Mix all vegetables and toss well.
|

Mix all dry ingredients and mix well.
|

Combine mayonnaise and mustard and mix to blend. Add the dry ingredients to the mixture and incorporate by mixing well.

Spread the mayonnaise mixture around on the greens and toss to coat all vegetable surfaces with the mayonnaise mixture. Serve.
