Beermato Aspic Recipe simmers a tomato juice mixture of beer, chopped onion, celery leaves, sugar, lemon juice, salt and bay leaf and adds to dissolved gelatin to create this delicious and attractive molded dish.

INGREDIENTS
|
1 can (18 ounces) tomato juice (2 1/4 cups)
|
1 can or bottle (12 oz) beer
|
1/3 cup chopped onion
|
1/3 cup chopped celery leaves (optional)
|
2 1/2 tablespoons sugar
|
1 tablespoon lemon juice
|
1/2 teaspoon salt
|
1 bay leaf
|
2 envelopes unflavored gelatin
|
1/4 cup cold water
|
|
|
|

|

DIRECTIONS
|

Combine tomato juice (reserve 1/4 cup), beer, onion, celery leaves, sugar, lemon juice, salt, and bay leaf in a saucepan. Simmer, uncovered, 10 minutes.

Meanwhile, sprinkle gelatin over cold water and reserved tomato juice in a large bowl; let stand to soften.

Strain hot tomato juice mixture into bowl; stir until gelatin is completely dissolved.

Pour into a lightly oiled 1-quart mold. Chill until firm. Unmold onto crisp salad greens. Note: For individual aspics, turn mixture into 8 oiled 1/2-cup molds. Chill until firm.
