German Potato Salad Recipe fries bacon crisp then uses drippings to make sauce of onions, cider vinegar, sugar and salt and pepper to pour over cooked potato slices which is then garnished with snipped parsley and paprika.

INGREDIENTS
|
12 slices bacon, diced and
fried until crisp (reserve 6
tablespoons drippings)
|
3 medium-sized onions, chopped (2 cups)
|
1 cup less 2 tablespoons
cider vinegar
|
1 1/2 tablespoons sugar
|
1 1/2 teaspoons salt
|
1/4 teaspoon pepper
|
2 to 3 lbs. potatoes, cooked,
peeled, and cut in 1/4-inch
slices
|

DIRECTIONS
|
1:
Heat bacon drippings in a skillet. Add onion and cook until tender, stirring occasionally. Stir in vinegar, sugar, salt, and pepper; heat to boiling. Mix in bacon.

Pour over potato slices in a serving dish and toss lightly to coat evenly. Garnish with snipped parsley and paprika. Serve hot.
