Shades o' Green Salad Recipe makes a delicious salad using spinach, celery, green peppers, cucumber, lettuce and chopped chives garnished with sliced olives and avocado and drizzled with French dressing to create this tasty salad recipe.

INGREDIENTS

French Dressing (search recipes)
|
3 ounces (about 3 cups)
spinach
|
4 stalks Pascal celery
|
1/2 green pepper
|
1 cucumber, rinsed
|
1/2 head lettuce
|
2 tablespoons chopped
chives
|
6 green olives
|
1 small avocado
|
|
|
|
|
|
|
|

DIRECTIONS
|
1:
Chill 6 individual salad bowls in refrigerator.
Prepare and chill French dressing. Remove and discard tough stems, roots and bruised
leaves from spinach. Wash, drain and pat dry. Use part of the spinach to line the salad bowls. Set remainder aside.

Cut celery, pepper and cucumber into pieces or slices. Rinse lettuce, drain and pat dry.
Tear lettuce and reserved spinach into pieces. Toss vegetables with lettuce, spinach and chives.

Add about 1/3 cup of the French dressing; toss lightly to coat greens evenly. (Store remaining dressing in a covered container in refrigerator.) Arrange individual portions of salad in bowls.

4:
Pit and slice olives. Rinse, peel, cut into halves lengthwise, remove pit and slice avocado. Garnish salads with avocado and olive slices.
