Tossed Salad with Spicy Chicken Breast Chunks Recipe tops your favorite tossed salad with delicious chunks of pan seared chicken breast which have been seasoned to perfection with this tasty salad recipe.


INGREDIENTS
1/2 head iceberg lettuce
1/4 bunch Romaine lettuce
2 or 3 radishes, sliced
1 cucumber, thinly sliced
1/2 large green pepper, chopped
1/2 large onion, chopped
Ranch Dressing
1 large chicken breast, skinless and boneless
2 Tbl. olive or vegetable oil
1 tsp. chili powder
1/2 tsp. salt
1/2 tsp. paprika
1/2 tsp. brown sugar
1/4 tsp. black pepper
1/4 tsp. onion powder
1/4 tsp. garlic powder
1/4 tsp. dried oregano
1/4 tsp. ground cumin
1/8 tsp. cayenne pepper


DIRECTIONS
1: Prepare your favorite tossed salad or use the salad ingredients listed above. Refrigerate to keep cool.
 
2: Prepare the spice mixture by combining all of the ingredients from chili powder through cayenne pepper.
 
3: Cube the chicken breast into 1 inch sized cubes. If the chicken breast is rather large and thick, consider cutting the breast in half, horizontally into two pieces before cubing.
 
4: Place the oil in a skillet over medium heat. Place the chicken along with the spice mixture into a bag or other suitable container to toss the chicken to coat well. Place the chicken into the hot oil and pan fry, stirring occasionally, until the chicken is done and reaches 170°F internal temperature. Remove chicken and drain if desired before placing on salad for service.
