INGREDIENTS

8 oz. chicken breast, skinless and boneless
|
4 tsp. chili powder
|
2 tsp. brown sugar
|
2 tsp. salt
|
2 tsp. paprika
|
1 tsp. onion powder
|
1 tsp. black pepper
|
1 tsp. garlic powder
|
1 tsp. oregano
|
1 tsp. cumin
|
1/2 tsp. cayenne pepper
|
10 oz. iceberg lettuce
|
8 tomato wedges
|
4 Tbl. ranch dressing
|
Vegetable oil for pan frying chicken breast
|

DIRECTIONS

1:
Make the salad of your choice, with lettuce of choice and additions of choice such as tomato, olives, cucumber, celery, hard cooked eggs, and dressing of choice.

Combine all spices and mix well. (This combination of spices is great for seasoning tacos, fajitas and other meats.) The spice blend stores very well in a zip-lock bag.

Cut the chicken breast into long strips about 3/4 inch wide. Liberally sprinkle all sides of the strips with the spice blend.

Place about 1/4 inch of vegetable oil into a skillet set on medium-high heat. Once the oil begins to shimmer, carefully lay the spiced chicken strips into the hot oil. Turn and rotate the strips to fully cook. Once cooked remove the strips to a plate lined with paper towels. Cut the strips into 1/2 inch segments. Place chunks of spiced chicken onto prepared salads. Enjoy!
