INGREDIENTS

6 1/2, 7, or 9 1/4-ounce can tuna, drained
|
1 tablespoon lemon juice
|
2 hard-cooked eggs
|
1/4 cup thinly sliced dill pickle
|
2 tablespoons thinly sliced
green onion
|
1/4 teaspoon salt
|
Dash pepper
|
3 English muffins
|
3 medium tomatoes
|
Butter or margarine
|
Boston or Bibb lettuce
|
Mayonnaise or salad dressing.

DIRECTIONS
|
1:
Break one 6 1/2, 7, or 9 1/4-ounce can tuna,
drained, into chunks; sprinkle with 1 tablespoon
lemon juice.

Combine tuna; 2 hard-cooked eggs, coarsely chopped; 1/4 cup thinly sliced dill pickle; 2 tablespoons thinly sliced green onion; 1/4 teaspoon salt; and dash pepper.
Toss lightly and chill thoroughly.

3:
Split 3 English muffins in half; toast, then
spread with softened butter or margarine.
Thinly slice 3 medium tomatoes into 18
slices. Top each buttered muffin half with
Boston or Bibb lettuce, 3 tomato slices,
and tuna-egg mixture. Garnish each sandwich
with dollop of mayonnaise or salad
dressing.
