DIRECTIONS
1:
In a large bowl with an airtight lid, add the mayonnaise, the apple cider vinegar, the granulated sugar, the Dijon mustard, and the celery seed and whisk to combine. Add the scallions and the coleslaw mix to the mayonnaise mixture and toss until well-combined.
2:
Cover and transfer the coleslaw mixture to the refrigerator to marinate until ready to use, about 1 hour. On a flat surface with a butter knife, evenly spread the Russian dressing on each of the 12 slices of rye bread.
3:
Add 4 ounces of the pastrami to each of the 6 bottom slices of the rye bread. Evenly add about 1/2 cup of the coleslaw mixture on top of the pastrami layer. Add the remaining 6 slices of rye bread to the top of the coleslaw mixture.
4:
Plate with the potato salad and serve, using toothpicks to hold the sandwiches together if needed.
