INGREDIENTS
|

For the chili:
|
|
2 tablespoons vegetable oil
|
|
1/2 onion, finely chopped
|
|
2 cloves garlic, minced
|
|
1 pound lean ground beef
|
|
2 1/2 tablespoons chili powder
|
|
1 teaspoon sugar
|
|
1/2 teaspoon cumin
|
|
1 teaspoon Worcestershire sauce
|
|
3 tablespoons tomato paste
|
|
1 cup beef broth
|
|
3 tablespoons corn meal
|
|
1/2 tablespoon kosher salt, plus more, to taste
|
|
For serving:
|
|
8 hot dogs, cooked and hot
|
|
8 hot dog buns
|
|
cheddar cheese, to taste, shredded, optional
|
|
|

DIRECTIONS
|
|

Place ground beef into a cold heavy bottom skillet. Place on medium heat and cook until beef is no longer pink. Break the ground beef up with a potato masher as it is being cooked. Drain beef if necessary. Remove beef from skillet and set aside.

Add the oil and the onions to the skillet and sauté until they are translucent. Add the garlic to the onion and cook until fragrant, about 1 minute.

Add the chili powder, the sugar, the cumin, the Worcestershire sauce, the tomato paste, the beef broth, the corn meal, and 1/2 tablespoon of the salt to the beef mixture and stir to combine.

Reduce the heat to a simmer and cook for 15 minutes. Taste the chili mixture and add more of the salt as needed. Place the hot dogs in the buns, top with the chili, and sprinkle with the cheese. Serve.
