INGREDIENTS

2 4oz red snapper fillets
|
|
salt, to taste
|
|
black pepper, to taste
|
|
1/2 cup all-purpose flour
|
|
1/4 cup cornmeal
|
|
1 teaspoon baking powder
|
|
2 6-inch hamburger buns
|
|
4 tbsp tartar sauce
|
|
2 cups olive oil
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

DIRECTIONS

Dry the snapper fillets and apply salt and pepper, to taste.

Combine flour, cornmeal, and baking powder and mix well. Heat olive oil over medium-high heat to 350°F.

While oil is heating, coat the fillets with the cornmeal mix. When oil is hot, carefully lower the fillets into the oil. Cook for two minutes. Turn the fillets over and cook for another two minutes. Check the internal temperature of the fillets with a thermometer. Fillets will be done at 145°F.

Place fillets on the bottom of the hamburger buns. Coat the top of the buns with tartar sauce. Close sandwich and enjoy.
